Ingredients

6 ounces semisweet baking chocolate or white chocolate baking bars, chopped

2 tablespoons butter

1/4cup heavy whipping cream

1 cup semisweet chocolate chips or white vanilla baking chips

1 tablespoon shortening

Finely chopped nuts or candy decorations, if desired

Steps

1. Prepare a cookie sheet by lining it with foil. Melt baking chocolate in a 2-quart saucepan over low heat, stirring constantly; whisk in butter until melted and smooth. Remove from the heat and fold in the whipping cream. Fill a small bowl halfway with the mixture. Refrigerate for 10 to 15 minutes, or until thick enough to retain a shape, stirring often.

2. Spoon the mixture onto a lined cookie sheet in rounded measuring teaspoonfuls. Return to the refrigerator for another 5 to 10 minutes, or until the mixture is hard enough to shape. Make balls out of the dough. Freeze for 30 minutes, uncovered.

3. Melt chocolate chips and shortening in a 1-quart saucepan over low heat, stirring constantly, until chocolate is melted and the mixture is smooth; remove from heat. Dip and roll chocolate balls in melted chocolate with 2 forks, one at a time; tap off excess chocolate. Place on a cookie sheet that has been lined. Sprinkle with nuts right away. Reheat if the chocolate has cooled too much. Rep with the rest of the chocolate balls.

4. Chill truffles for 10 minutes or until chocolate has hardened. Refrigerate in an airtight container. Remove 10 minutes before serving from the refrigerator.
