Chilli Garlic Noodles are a flavorful noodle meal that is popular in Indo-Chinese restaurants.

These spicy and tasty noodles will have you wanting more and more. Garlic, dried red chilies, onions, green chilies, sauces, and veggies provide the taste.

While the dried red chilies add just the proper amount of heat, the sauces amp up the taste.

If you don’t want it too hot, adjust the number of dried red chilies to your liking, especially if you’re cooking it for children.

I made Veg Noodles, but you can easily make a non-vegetarian version by adding cooked chicken or prawn pieces.

Ingredients

Noodles — I used Hakka Noodles in this recipe, but you may use any noodles of your choosing.

Veggies – This meal is abundant in vegetables. I used yellow bell pepper, carrot, beans, and cabbage, but you may substitute broccoli, zucchini, bok choy, sprouts, greens, and other veggies. The meal is also garnished with green onions.

You may even add Tofu or Paneer to your noodles for some protein.

Additional Ingredients – We will also need garlic, dried red chilies, onions, green chilies, vinegar, black pepper powder, red chilli sauce, green chilli sauce, salt, and soy sauce in addition to the items listed above.

Step-by-Step Instructions

Cook the noodles according to the package directions until they are 90% done. Remove the water.

Toss in a little oil and soy sauce. Set aside the noodles.

In a pan, heat the sesame oil. Sauté garlic, dried red chilies, onion, and green chilies for a minute.

Cook for another minute after adding the yellow bell pepper, carrot, beans, and cabbage.

Mix in the salt, black pepper powder, vinegar, red chilli sauce, and green chilli sauce.

Toss in the cooked noodles gradually.

Serve hot, garnished with spring onion greens.
