Here we look at how you can treat your special one with this finger-licking chicken, Chettinad pepper chicken.

This is a non-vegetarian starter recipe that is widely consumed across India. This is very easy to cook and it is best to eat. Chettinad pepper chicken is made by roasting Indian spices and then the chicken is sauteed along with masala.

Take chicken 500 grams.

To Dry Roast: coriander seeds, cumin seeds, fennel seeds, cloves, cinnamon, cardamom, black paper corn, dried red chili, grated coconut.

To Saute:

Coconut oil, garlic, ginger, tomato, water.

Other Ingredients:

Coconut oil, curry leaves, dried red chili, turmeric powder.

PROCEDURE.

Wash and clean chicken with salt, turmeric, and lemon juice.

Roast all dry masala and keep.

In another pan add oil and onion and saute. Add ginger and garlic and saute for a minute. Add tomato and cook till it gets mushy. Remove from heat.

In the grinder add this sauteed mixture and roasted masala and grind to a smooth paste.

Put oil in a pan, add dry chili and curry leaves and saute. Add paste, turmeric powder, salt, and saute for 2 minutes. Add chicken and a cup of water and cook for 10-15 minutes. Add coriander leaves, mix well and remove from heat and serve to your special dish.
