Lamb Ragu-

Ingredients- 2 pounds cut in chunks stew lamb, Salt and freshly ground black pepper, 2 onions, 4 sprigs fresh rosemary, 3 tablespoons fresh sage, 8 cloves garlic, 1 peeled, big carrot, Olive oil, 2 cups red wine, 1 28-ounce can peeled whole plum tomatoes.

Procedure-

1. Coat the lamb chunks with salt and pepper and set aside. Now, chop the onions, and garlic, chop the carrot into thin rounds.

2. Place a heavy stockpot over medium-high heat and add some olive oil. Now, add the lamb in batches.

3. Now, add the onions. Now, add the rosemary and sage, garlic, and the carrots.

4. Add wine and continue to simmer until the liquid has reduced. Crush the tomatoes in the can with a fork and add them and their juices to the pot.

5. Bring it to a simmer, cover and place in a 275-degree oven for 3 to 4 hours.

6. Serve hot!
