Meethi is healthy for the body and is usually great for the heart. This unique recipe is full of flavour and loved by many. It is rolled flat like chapati. It is a great favourite with many. It is really easy to prepare and the recipe is divine. Methi helps at controlling diabetes, cholesterol levels, improves heart health and cures constipation and joint pain. Ingredients required
2 cups wheat flour/atta, 1 cup methi leaves/fenugreek leaves, finely chopped, ¼ cup curd/yoghurt fresh/sour, ½ tsp turmeric / haldi, 1 tsp ginger paste, ½ tsp Kashmiri red chilli powder / lal mirch powder, ¼ tsp cumin powder/jeera powder, salt as per taste, ½ tsp carom seeds/ajwain, 2 tsp oil, water as required, 5 tsp ghee, for the roasting of paratha.
Procedure:
First, in a large mixing bowl add wheat flour and finely chopped methi leaves. Add ¼ cup of curd, curd helps to balance the bitterness of methi. Add spices and salt to taste, add 2 tsp of oil and combine well.
Now add some water and knead the dough until it’s soft. Cover the dough with a moist kitchen cloth and set it rest for sometime.
Now divide the dough into equal medium-sized ball dough, roll it and flatten it. Now, dust some wheat flour and roll into 5 inches chapati using rolling pins.
Make the rest of the chapatis and set aside. Heat the tawa and place the parathas one by one on the flame and let it roast on each side, apply ghee while roasting.
Try to flip it once either side is partly cooked and add more ghee to that side. Remove it from the flame.
Your parathas are ready to be served. Finally, serve methi parathas with raita and pickled mangos or any other pickle
