Ingredients:
1 tablespoon + 2 teaspoons vegetable oil divided use
1 cup shredded carrots
1/2 cup white onion thinly sliced
1/2 cup green onions long thinly sliced
2 teaspoons minced garlic
1 packet cooked fresh noodles such as yakisoba or Hong Kong noodles
1/4 cup low sodium soy sauce
1 tablespoon hoisin sauce
1 tablespoon toasted sesame oil
2 teaspoons cornstarch
1 cup bean sprouts
1 tablespoon sesame seeds
thinly sliced green onions for garnish optional
Procedure:
Put 2 teaspoons of vegetable oil over medium flame heat in a large pan. Add the chopped carrots and white onions to the pan and sauté well. Cook for 3-5 minutes, until vegetables, are soft.
Add the green onions and chopped garlic and let it cook for another 30 seconds.
Now remove the vegetables from the pan in a bowl and cover it to keep it warm.
Now rinse the noodles under hot water to separate each. Again heat the remaining vegetable oil in the pan. Add cook the noodles for 3-4 minutes on each side or until they are brownish and crispy on the edges.
Now add the vegetables back in the pan and combine.
Now in a small bowl, whisk soy sauce, hoisin sauce, sesame oil, cornstarch and 2 tablespoons of cold water and mix well.
Add the prepared sauce to the pan and bring to medium heat. Now cook for another 2-3 minutes or until the sauce has just thickened a little bit and sprinkle with sesame seeds and more green onions if required and serve in plates and enjoy!
