Let’s have a look at the delicacy. A blend of our favorite soft sweet Rasmalai and moist cake.
Ingredients:
For the Eggless Vanilla Cake Base –
1 ⅓ cups All Purpose Flour/ Maida
¾ cup Sugar
½ cup Plain Yogurt/Curd
¾ cup Milk
½ cup Oil
½ tsp Baking Powder
1 tsp Baking Soda
1 tsp Vanilla Essence
¼ tsp Cardamom Powder
A pinch of Salt
For Decorating the Cake –
10-12 Small Rasmalai
1 cup Whipping Cream (You can use any brand)
¼ cup Ras from Rasmalai (Thick Milk from Rasmalai)
2 tbsp Icing Sugar
½ tsp Vanilla Essence
Yellow Food Color (optional)
¼ cup Finely Chopped Pistachios & Almonds
Instructions
-Preheat oven at 180°C for 10-12 mins and oil, line two 6″ round preparing skillet with material paper.
-In a mixing bowl, add your dry ingredients, all-purpose flour, baking powder, baking soda, cardamom powder, and salt and sift it well and mix it well.
-In another mixing bowl, add wet ingredients ie. milk, curd, oil, vanilla essence, and icing sugar.
-Blend the ingredients in with a race until the sugar is all mixed and blended.
-Now add the wet ingredients into the dry ingredients and mix well.
-Cut fold it in delicately until there are no lumps left, if the mixture feels dry, add a few tbsp of milk.
-Empty the prepared batter into a lined heating pan.
-Bake it at 180°C for 30-40 mins until a stick embedded comes out clean.
-Transform the cake on a cooling rack and eliminate the material paper. Let it cool completely.
-Add Ras (thick milk from Rasmalai) to the whipping cream blend.
-Whip the cream until delicate there are soft peaks framed. You can add in some yellow food coloring at this stage as well.
-Trim the tops of the cake to make it look even.
-Brush each layer generously with Ras (thick milk from Rasmalai) all around the cake.
-Spread a layer of whipping cream equally on the cake.
-Spot the other cake and apply a layer of cream on the top just as the sides.
-You can decorate with Rasmalai and sprinkle finely cleaved pistachios and almonds as per your wish.
-Chill it until prepared to serve and enjoy!
