Beetroot has amazing health benefits and is known as a superfood as well. Here is an amazing recipe for beetroot soup which will not only be delicious but also very much healthy.
INGREDIENTS
▢1 tsp butter
▢1 bay leaf
▢2 clove garlic (chopped)
▢1-inch ginger (chopped)
▢2 shallots, halved
▢1½ cup beetroot (cubed)
▢1 carrot (cubed)
▢1 tomato (chopped)
▢½ tsp salt
▢2 cup of water
▢1 tsp pepper (crushed)
▢cream and mint for garnish
Procedure:
The first step, in a pressure cooker, take 1 tsp butter and add 1 bay leaf and saute until its aroma is all over your kitchen.
Now add in 2 clove garlic, 1-inch ginger, 2 shallots, and again saute until it slightly shrinks and it is full of aroma.
Now in these spices, add 1½ cup beetroot, 1 carrot, 1 tomato, ½ tsp salt, and combine while stirring and saute for 2 minutes.
Now add 2 cups of water and close the lid and pressure cooker it for 3-4 whistles.
Once done, it’s cooled off and drain off the water completely. Put the pressure-cooked vegetables into a blender and blend until a smooth paste.
Now transfer this beetroot paste into a large Kadai and let it boil. Add water as per requirement. (Use the stalk of boiled vegetables)
Mix well while adjusting the consistency of the soup is maintained. Add 1 tsp pepper and salt as per taste and mix well.
Finally, garnish the soup with mint and cream. And enjoy!!
