This easy recipe of Tomato soup is creamy and rich and is perfect for enjoying a hearty lunch starter or as a perfect light dinner. This soup is made from fresh tomatoes and cream which gives it the richness it desires to have. It can be made from scratch and the preparation time is as little as 30 minutes. This is a homemade and effortless kind of a dish. It can be enjoyed at any time of the year. The bold tangy-sweet flavor of fresh tomato for the spring and summers and the creamy richness from the cream makes it perfect comfort food for winter nights and colds.

Step 1 is Cooking Tomatoes

Melt 2 tablespoons of butter or ghee in a pot on medium-low heat. Now, add 2 bay leaves and fry them in the butter for a few moments until they turn light brown.

Now Add ½ teaspoon of finely chopped garlic and ⅓ cup of finely chopped onions to the pan and saute well to combine it well together. Sauté and stir until the onions become translucent for about 3 to 4 minutes.

Now add the fresh chopped 6-7 medium-sized tomatoes. Season it with salt and pepper as per taste and stir, cover and on simmer flame, let it cook for about 8-10 minutes.

Now Stir and have a look at the consistency of the mixture. If the liquid is drying up and the tomatoes are sticking to the pan, add a little water to it. But don’t add too much water to make it runny and liquidy.

After the tomatoes have softened, and the mixture looks cooked, remove from the heat and keep it aside, let it cool.

Once the tomato mixture has cooled out, you can add it to a blender jar and blend it into a thick smooth liquid. You can either strain or use it as it is.

Now pour the blended tomato puree back into the pot and water as per the consistency desired. Stir well. Add half tablespoon of sugar and stir and combine again.

Simmer on low flame until the tomato soup becomes hot and you see bubbles. Now, turn off the heat and stir well, add 1 to 2 tablespoons of heavy cream for richness and serve in bowls and enjoy!!
