PROCEDURE:

* Take out seeds from red chillies and add them to a bowl. Pour 3 tbsps of vinegar and 3-4 tbsps of hot water and keep it aside.

* Meanwhile prepare spice powder by adding coriander seeds, cumin, pepper, mustard seeds, cinnamon, cloves, and green cardamom to a blender jar.

* Add chopped ginger garlic and soaked red chillies to the blender, add vinegar and water mixture used for soaking chillies in a blender.

* Make a fine paste and add it to chicken pieces, add salt and turmeric powder and mix well. Marinate chicken for a longer period, maybe overnight in the freezer.

* In a pan heat oil, add finely chopped onions, and fry until golden brown. Add vinegar, little sugar, and marinated chicken and saute it properly until the chicken cooks evenly.

* Add Tomato puree and saute well for few minutes.

* Mix well and cook on medium to low heat until chicken is fully cooked and tender on the inside.

Your chicken vindaloo is ready to serve and you can have it with plain rice, paratha, or naan.
