Christmas season just passed! But would you still want to taste the last sweet delight of Christmas? Don’t stress we’ve got this covered! Try this delicious traditional boozy English style pudding recipe! Few dishes that are made during Christmas, bring the Christmas cheer back again! One such dish is this Rum Soaked Plum Pudding.

Soaked fruits, candied peels, rum, and spices bring out the best flavor from this recipe. It also brings out the most unique flavor and has great texture.

List of ingredients:

1 egg, 3 tbsp sugar, 4 tbsp brown sugar, 1 tbsp all-purpose flour, 1/4 tsp baking powder, 4 tbsp fresh breadcrumbs, 1/4 tsp nutmeg powder,1/4 tsp ginger spice powder, 1/4 tsp ground cinnamon, 1/4tsp cardamom powder, 3 orange, for zest, 1.5 cup orange juice, 1/2 cup butter, 1 cup white or black rum, 4 tbsp cranberry, 4 tbsp black raisins, 4 tbsp brown raisins, 2 cups chopped almonds, 2 tbsp candied orange peel, chopped, 2 tbsp candied lemon peel, chopped (optional)

Procedure:

1. Sift the dry ingredients together, this will include the flour, baking powder, powdered spices and combine well together.

2. Add orange zest into the brown sugar and the white sugar.

3. Add all the dry ingredients along with bread crumbs in a mixer. Make the buttercream and add the dry ingredients until the texture is sandy.

4. Now, add in the eggs and lukewarm orange juice to the mixture. Mix until well combined.

5. Now add the plum pudding batter to the mixer and mix until it has a smooth texture. This takes approximately 4-5 minutes.

6. Now add rum, one cup orange juice, zest of 2 oranges, cranberry, raisins, almonds, and candied peels for the soaked fruits mix and keep it aside for 10 minutes. Add the mixture to the batter.

7. Grease the aluminum bundt cake mini tin or any other tin with butter and pour the batter into the tin, fill it to about 80%.

8. Bake this plum pudding in a water bath at 150 degree celcius for 90 minutes in an OTG oven.

12. Once it’s baked, check with a toothpick and let it cool on a wire cooling rack for 20 minutes, and unmould the cake.

13. You can glaze the cake pudding with toppings of your choice either fondant or simply dust it with icing sugar.
