Ingredients Needed

two slices of multigrain/vegan bread, 1/4 cup carrot, 1/2 cup celery, and 1 cup of chickpeas 2 tablespoons mayo, 1 tablespoon mustard seeds, 1 head of romaine lettuce a tiny tomato, some salt, and pepper, to taste.

STEP 1

Soak chickpeas overnight and boil for 2 whistles.

STEP 2

Blend chickpeas along with mayonnaise and mustard grains into a coarse mixture.

STEP 3

Transfer it to a bowl and mix celery and diced carrots to it.

STEP 4

Toast the bread slices using oil or butter in a toaster.

STEP 5

Place lettuce over the toasted bread and top with chickpea spread.

Add some diced tomatoes, salt, and. pepper to taste.
